Sue made these to have after Steve’s Sticky Chicken – delicate and refreshing after the tasty chicken. We had them with cold vanilla custard, but cream or ice cream would be equally delicious.
3 conference or Comice pears (ie. 1 each)
2 dstsps Caster sugar
zest and juice of half a lemon
Half vanilla pod And/or half stick of cinnamon
Peel pears and trim the base flat if you want to serve standing. Put in medium saucepan and two-thirds cover with water, add flavourings and poach for about 45 minutes turning occasionally until a knife point slips in easily.
Move pears to a serving dish – or, as Sue did, cut in half and arrange on individual plates – reduce liquid until syrupy and serve with custard or cream.
